  • Apple seeds need stratification to sprout in the spring. Leaving them outside will probably be enough if it is consistently cold (within a few degrees of freezing) for 6 weeks or so. Don't leave them in the sun if it's a mild winter.

    That said, seeds are most viable out of ripe fruit, not unripe fruit. The seeds are the point of the fruit, so you can count on the fruit ripeness to tell you when they're ready. I don't think apples ripen off the tree, so if they are unripe they may not be (as) viable in the first place.
