I think the theory that they spoke German, which Harker understood but (quite understandably, given the circumstances) failed to mention in his diary, while at first seeming far-fetched does provide an acceptable explanation. Whether this was Stoker’s intention when he wrote the chapter, or simply an oversight, is of course another question.
