What’s your go to easy meal?

For me its Golden Curry. Just dice up some veg, boil in veg/mushroom broth, and serve with rice.

It takes probably 20 minutes and is very inactive.

It also has the plus that I can use basically any veg combo, but I don’t really stray far from the OG carrots, potatoes, and onions. I do often add broccoli or cauliflower.

Bonus points for beanless and cornless recipes. Fiance can’t have either :(

    I prefer House Foods’ Vermont Curry, which is similar but has some apple and honey flavour subtly in the mix. (They don’t seem to have it in the EU or UK, though, so it might contain an ingredient considered unsuitable for European consumption. The US, Canada and Australia get it just fine, though.)

    Similarly, Maesri Thai curry pastes.

    You gotta check the labels, some have fish sauce in them and I don’t remember which, but most don’t.

    Stir fry the paste a bit, add in a can of coconut milk and whatever veg/protein you like, cook down to desired doneness of veg and thickness of sauce. I usually do tomatoes, pineapple, carrots, bamboo and canned mock duck for vegan meals. Comes together in well under 30 minutes, easy. Eggplant and pumpkin are also delicious in this. Bf likes the yellow one with chicken (swap with your desired protein) and potato.

    Embarrassingly, my roommate calls the ones I make with the green curry paste “my best curry yet” every time I make it.

    Serve with rice, garnish with lime and their leaves or basil, it looks much fancier and harder than it is.

    Some of those have milk in them, caught me by surprise since some do some don’t. A little accidental milk exposure doesn’t bother me much but just fyi.
